Pio Cesare 'Ornato' Barolo (UDSOLGT)

Flagskibet blandt Pio Cesares vine og dermed også et flagskib for hele Piemonte. Druerne til denne Barolo kommer fra enkeltmarken Ornato. Efter 15 dages skindkontakt og gæring lagres vinen 36 måneder på ristet fransk egetræ. 70% på små 225 liter bariques og 30 % på 2500 liters fade. Mørk og kompakt rød står vinen i glasset foran en. Fra start viser næsen en fantastisk dybde med engelsk lakrids, blommer, ristet træ, rosenhave og en elegant og mineralsk rød frugt. På tungen er vinen intens og potent med noter af læder, jordbær, peber, vanilje og violer. Eftersmagen vil aldrig slutte og er domineret af ungdommelige tanniner og en struktur der vil give denne vin et næsten uendeligt liv. Bør iltes 3-4 timer før servering ved 15-16 grader og har man tålmodighed til at gemme vinen i 7-8 år, vil den udvikle en fantastisk kompleksitet og elegance. Kan gemmes op til 30-35 år fra høståret. 98 point af James Suckling (nr. 28 på listen "Top 100 Wines of 2016"): "This is amazingly structured with tight and polished tannins that give this wine superb linear length and balance.
