Fra en lille parcel kaldet Canajas beliggende i 465 meters højde, en parcel med et ekstremt lavt udbytte pga. en porøs jordbund bestående af kalk og den høje kolde beliggenhed.  79% tempranillo, 15% cabernet Sauvignon og 6% Graciano. Druerne er sorteret helt ned på den enkelte drue, så kun de perfekte druer ryger med videre til gæring i ståltanke. Efterfølgende lagres vinen 19 måneder i nye franske egetræsfade. Dalmau er markant anderledes end Murrietas andre vine. Duften her er mere potent, pakket med mørk balsamisk frugt, vanilje, cigarkasse, blyantspids og cedertræ - som en Ribera del Duero møder Medoc. Selv ved frigivelse 5 år efter høst er vinen uhyre ungdommelig. Her er oceaner af frugt, krydret med det fineste fadpræg man kan forestille sig.  Dalmau bør serveres sammen med det bedste kød man kan få fat i, f.eks. grillet rib-eye eller entrecote. Vi anbefaler at ilte vinen 3-4 timer før servering ved 15-16 grader. Dalmau kan gemmes op til 25 år fra høståret.  93 point - James Suckling: \"Aromas of spices, sweet tobacco, smoke and currants. Full-bodied, chewy and powerful. Modern style. A blend of 80% tempranillo, 15% cabernet sauvignon and 5% graciano. Needs at least four to five years more to soften.\"  93 point - Parker\/The Wine Advocate: \"The 2012 Dalmau Reserva--they call it their 'modern' red--is a wine that has evolved since the first vintage in 1994; it is now sourced from one single plot of vines, the Pago Canajas, within their Ygay Estate. The blend here is 70% Tempranillo, 15% Cabernet Sauvignon and 15% Graciano, and the aging is exclusively in new French oak barriques and it lasts some 19 months. The varieties of this wine are always aged separately and the blend is decided after the élevage; the blend is different according to the conditions of each harvest. This feels like a ripe and voluptuous vintage with aromas of blackberries and a minty hint, with an earthy touch.
