Capellanía er en lille vinmark i 485 meters højde, tilplantet i 1945 med 100% Viura. De høstede druer sorteres grundigt, efter en kort skindkontakt presses druerne i en vertikal presse. Mosten gærer ca. 3 uger i ståltanke, inden vinen lagres 17 måneder i franske egetræsfade. Vinen lagrer et år i ståltanke før den flaskes, hvor den hviler yderligere minimum et år før frigivelse. Aromaen er pakket med bl.a. hvide blomster, honning, fennikel, ananas og karamel. Dette er vin skabt til at matche intens gastronomi. Smagen har fedme og et krydret element fra fadlagringen, perfekt sammen med f.eks. stegt pighvar med en fed sauce, grillet lyst kød og ikke mindst faste oste som f.eks. comté, vesterhavsost og selvfølgelig manchego. 93 Point Guia Penin, Spanien. Drink now. 93 point - Guía Peñín +91P - Wine Advocate/Parker: Capellanía is the name of a vineyard in the Ygay estate, the highest altitude one at 485 meters altitude, and is also the name of a white from Marqués de Murrieta. The 2011 Capellanía is a wine produced with Viura grapes aged like a red, with the idea to produce a white with ability to live long in bottle. The must obtained from a slow pressing of the full clusters fermented in stainless steel and the wine matured in new 225-liter French oak barriques. 2011 was a very warm and ripe vintage, and a long time in new oak can provide very oaky wines, especially in wines with moderate acidity, which sometimes take the oak aromas and flavors in a very strong way. This is not the case here; the wine is exuberant and perfumed, with aromas of lemon sherbet, magnolia flowers and subtle, elegant spicy oak. There is a sense of harmony that is breathtaking.
